Apple crisp for two.

Well, the time has come…today is Jared’s first day on the job. He’s now a real live lawyer! I woke up early to make him some oatmeal and grapefruit to start the day off right. We were both a little nervous for different reasons I’m sure. Sadly, I am now on my own all day Monday through Friday (and probably occasionally on Saturday). I can’t wait to see what kind of trouble I get into. As a little celebration of the upcoming new chapter for us, I wanted to make an extra delicious Sundie dinner last night. On the menu:

My Navajo tacos turned out fabulous. Normally my dough ends up like a hockey puck, but somehow I got it right last night. I think maybe because I used baking powder that wasn’t three years old! I will have to remember to keep the baking powder fresh.

The star of the night, though, was my apple crisp for two. It’s probably my favorite dessert of all time. It’s best to eat it right out of the oven, that’s why I like to make a small batch just for two. I use a tweaked version of the Better Homes and Gardens recipe. If you’re interested, this is how I do it:
  • Peel and thinly slice three golden delicious apples (or any other good baking apples).
  • Toss sliced apples in a bowl with one tablespoon of granulated sugar and a few shakes of cinnamon.
  • Arrange apples in two small ramekins, fitting as many in as you can.
  • In another bowl combine ¼ cup regular rolled oats, ¼ cup brown sugar, 2 tablespoons flour, 2 tablespoons of butter and a dash of cinnamon.
  • Cut butter into mixture until it resembles coarse crumbs.
  • Put the topping on the apples already in the ramekins (I do this on a baking sheet so I don’t make a mess).
  • Bake at 375 for about 22 minutes.
  • Eat it warm and don’t forget to serve with some freshly whipped cream.

I am with jenny on this one! That apple crisp is calling my name too, to bad it is 9 at night or I would make it! Good luck to Jared and you too Jamie. I hope you found something good at the craft store.
